


I went to a Nigerian cooking class a few weeks ago. Here’s a few pictures, but I’m sorry to say that I can’t give too much of an update about the cooking. I should have known that since ANY kind of cooking is way over my head that Nigerian cooking would be even more confusing. But, it was a great day and I got to EAT good food. We watched and some people learned how to make pounded yam, fried plantains and egusi soup. The egusi soup is made with ground egusi seeds (similar to melon seeds), fresh vegetables and meat. It was accompanied with fufu, which is casava (a tropical vegetable) dough. I wish that I could fill you in more, but anyone who knows me well knows that my patience with cooking does not last very long.
